Let’s have some FUN in the kitchen!  This is a quick and easy recipe for something fun and unexpected that is so delicious AND gluten free!  I was thinking about recipes to create in some new pieces of my Hestan ProBond cookware and my daughter came up with it.  The cookware has about 20% more cooking surface space and heats very quickly and evenly to provide just the “crust” I was looking for. Tater tots are so fun to cook with and I love the idea of making them into a crispy potato crust for a pizza instead of traditional dough.  If you’re looking for something fun and want gluten-free, you need to try this recipe for Tater Tot Pizza!


Tater tots are actually a really versatile ingredient, successful in so many dishes besides breakfast.  I learned this quickly while we were on the Great Food Truck Race in Alaska!  There’s something about those crispy, salty edges with warm, soft, fluffy potato inside…it’s a delicious bite!  When my daughter first mentioned this as a recipe idea, so many thoughts went through my head.   This could easily be made into a Mexican dish with queso, some shredded chicken, pork or steak, and topped with fresh salsa and cilantro.  Or, as a traditional tater tot dish, it could be an amazing breakfast tater tot pizza!  Top it with some cooked ground breakfast sausage, shredded cheddar cheese, some grilled bell peppers and top it with a few fried eggs on top…YUM!

Ingredients

  • 2 Tbsp. Extra Virgin Olive Oil

  • 1 lb. bag Extra Crispy Tater Tots – thawed

  • Seasoning – 1 tsp. kosher salt, ½ tsp. black pepper, 1 tsp. garlic powder, 1 tsp. Italian seasoning

  • 1 jar of marinara sauce

  • 1 cup shredded mozzarella

  • 8 oz. pepperoni

  • ¼ tsp. red chili flakes (if desired)

  • 1 Tbsp. fresh basil, julienned

  • 1-2 Tbsp. freshly grated parmesan


Instructions

1.  Grease bottom and sides of a large, flat bottomed skillet (10-12”)

2.  Preheat oven to 400 F.

3.  Toss thawed tater tots in a large bowl with salt, pepper, garlic powder and Italian seasoning, gently toss to season evenly.

4.  Carefully line the tots along the bottom of the skillet, in a single layer, without any space between them.  Then take remaining and line the perimeter of the skillet, so it looks like a “crust”.

5.  Bake the crust, top rack for 15 mins.

6.  Remove to add the toppings and increase the temp on the oven to 450F.

7.  Top the tater tot crust with pepperoni, sauce, cheese and more pepperoni on top. Add some red chili flakes if desired. You can have fun with it and add whatever your favorite pizza toppings are.

8.  Place back in the oven on the top rack and cook an addition 10-15 mins until the cheese is melted and crust is crisp.

9.  Remove and top with fresh chopped basil and parmesan cheese.

10. Cut into pie shaped slices and serve!
