Spicy Chicken & Pork Udon Noodles

I created this Chicken & Pork Udon Noodle dish for a recipe contest I just entered with Lucky Foods…fingers crossed!  You all know I love a good challenge and so when I was contacted to participate in this blogger recipe contest, I was fired up to get my creative juices flowing.  They sent me their Gochujang paste, Kalbi Sauce and Kimchi Mayo to try and immediately, I was flooded with ideas and recipe possibilities!


After tasting each of the sauces, they were all amazing, but I decided to use the Gochujang paste.  Gochujang is a widely used ingredient in Korean cooking and has a nice balance of sweetness, heat and umami flavors from the fermented soybean component in the paste.  It can be used in sauces, stir fry’s, soups, stews, braises and marinades.  I had so many ideas for recipe creation, but really wanted to challenge myself to create something completely new that I had never done before.  After making a list of a few ideas, I came up with this recipe for Chicken & Pork Udon Noodles, it is so quick and easy (start to finish in 30 mins) and it’s full of amazing flavors!  When you take a bite, it’s slightly sweet, has a hint of acid from the rice wine vinegar, saltiness from the soy and a punch of heat from the Gochujang paste.  Topping it with fresh chopped scallions and cilantro added an element of freshness to complete the dish!

This is a dish that can be served family style or at a party and can be enjoyed piping hot or at room temp, it’s delicious either way.  It makes an amazing accompaniment to a variety of dishes or can be the star of the show, served alongside a salad.  It’s really easy, has TONS of flavor and is sure to impress your family & friends!  If you are interested in exploring more of the sauces from Lucky Foods, you can follow them online, they are delish!

Ingredients

  • 1/3 cup Soy Sauce

  • 1 Tbsp. Gochujang paste

  • 1 Tbsp. garlic, minced

  • 1 Tbsp. ginger, minced

  • 2 Tbsp. Rice wine vinegar

  • 3 Tbsp. sesame oil (divided, 1 Tbsp. for sauce and 2 for pan)

  • 1 Tbsp. honey

  • 8 oz. package Udon Noodles

  • 2 Tbsp. vegetable oil

  • ½ lb. ground chicken

  • ½ lb. ground pork

  • 5 oz. shitake mushrooms, sliced

  • 3 scallions, sliced on a bias, ¼”, white and light greens separated from green tops


Instructions

1.  Make the sauce.  In a large bowl, combine soy sauce, Gochujang, minced garlic and ginger, rice wine vinegar, honey and sesame oil.

2.  Meanwhile, start a pot of boiling water and cook Udon noodles 2-3 mins. Transfer immediately to a strainer and then to a large bowl.  Add half of the sauce and toss to combine.

3.  Start a large skillet over medium high heat, add equal amounts vegetable oil and sesame oil.  Allow to heat for 2 mins.

4.  Add ground pork, chicken and sliced shitake mushrooms.  Cook until cooked through, about 10 mins.  Add the remaining half of the sauce along with the white and light green scallions and stir to combine.

5.  Toss the meat and mushroom mixture into the bowl with the Udon Noodles and stir to combine.

6.  Plate and top with chopped green scallions and chopped cilantro.
