Spicy Jalapeño & Cucumber Margarita

There’s nothing better than a spicy yet refreshing margarita on a hot day!  It’s my favorite cocktail and the key is the jalapeño infused tequila combined with the cool hint of cucumber. This sous vide method will infuse the tequila in a quick 45 mins. and you’ll be good to go.  However, if you don’t have a sous vide circulator, infusing it overnight in the fridge will also do the trick!  This Spicy Jalapeño & Cucumber Margarita is just what you need for a summer day by the pool.

For this infusion, I poured the tequila and sliced jalapeños into a Stasher bag.  I use them for a lot of my sous vide recipes because they are silicon, reusable and dishwasher safe.  If you don’t have a Stasher bag, you can also use a Ziplock or a mason jar, anything that’s air tight.


 Whenever we go out for Mexican food, I always order a spicy margarita, it’s my go-to!  So, when I decided to create my own, I wanted to add that hint of refreshing cucumber that I feel just makes it the perfect balance!  Cheers to summer!

Ingredients

  • 8 oz. tequila (recommended Don Julio Anejo, or another high-quality tequila)

  • 2 jalapeños sliced and divided.  One for infusing the tequila and the other sliced for garnish.

  • ½ cucumber, thinly sliced

  • Ice

  • 3 oz. Grand Marnier

  • 1 oz. Agave

  • 3 Tbsp. Margarita Salt

  • Zest of one lime, for salt

  • 10-12 limes – juiced to yield 6 oz.


Instructions

1.  In a zip-lock or sous vide bag, combine 8 oz. tequila and one sliced jalapeño. Sous vide at 135F for 45 mins.  Remove, strain to remove seeds and chill until ready to make drinks. 

2.  In a shaker, add 6 thin slices of cucumber and muddle.  Add 3 oz. tequila, 3 oz. Grand Marnier, 1 oz. agave, 6 oz. lime juice and ice.

3.  Cover and shake vigorously for 30 seconds.

4.  On a small plate, combine the margarita salt and lime zest.

5.  Use one of the halves of lime to moisten rim of the glass and gently coat the rim of the glass with the lime salt.

6.  Pour shaker over ice into salt rimed glass and garnish with a cucumber slice or slice of jalapeño.

7.  Repeat these proportions to make more margaritas with the remaining jalapeño infused tequila.


Notes

If you don’t have a sous vide, infuse the tequila with the jalapeno in the fridge overnight and strain when ready to make drinks.

One shot = 1.5 oz.
